I adore cooking with the kids, I love that they pull the chair up to the bunker (worktop if not in Scotland) and are keen to see what is going on. I have also found that this is a great way to get them to try different things to eat, as they are curious, raw onion was not a hit, surprisingly raw potato is.
I suppose that this encompasses my blog, food and motherhood, its not just about trying to get fresh, healthy food onto everyone plates, its using that time choosing, preparing and cooking food as a real special time, when I can pass on an interest, skills and have proper conversations with them, I really hope this lasts, I think this is our thing, mummy and kids thing and I love it.
But like most kids what excites them the most when cooking or baking is the mere mention of cake, I unfortunately am not a dab hand at the old flour and egg combo, I am a slow cooker type of cook, throw it all in and see what happens, but as it was a dreakit (wet and miserable) day, I promised the kids we would do some baking. I normally say its biscuits, when secretly I am trying for a cake, its a fail safe if they are bit crumbly/hard/flat.
However today we had success, I have already eaten 3 so they are good.
I looked for a recipe with the ingredients I had in the cupboard, which was flour, sugar, eggs, coffee and walnuts! It was obviously fate.
Found a nice wee recipe over at BBC Good Food, for Coffee Cream & Walnut Cupcakes and with my trust helpers, we set making our cupcake, possible coffee biscuits with coffee butter icing instead of the cream cheese option and do you know what, they turned out really really well! Chuffed!
